Superfood Enchilada Tostada

Superfood Tostada:

INGREDIENTS

For the tostadas:

  • Superfood crust or Cauliflower Crust
  • Olive oil

For the toppings:

  • RGF Enchiladas
  • Refried beans
  • Lettuce
  • Tomatoes
  • Avocados
  • Cotija cheese
  • Pickled jalapenos
  • Siracha aioli sauce (optional)

Instructions

  • Cut a circular shape from the superfood crust and add some olive oil. Pop in the oven at 400 F for 5-6 mins.
  • Follow the instructions to cook the RGF Enchiladas
  • To prepare a tostada, spread a large spoonful of mashed beans over a tostada shell. Sprinkle on cheese and other toppings
