Cauli Mac and Cheese with Cordon Bleu Stuffed Chicken
There's something comforting AF about curling up with a bowl of mac and cheese for dinner...and with our Cauli Mac and Cheese recipe, you can enjoy that same feeling while eating a low carb and high protein diet!
And in case you weren't already drooling at the idea of low carb mac and cheese with gooey Cordon Bleu Stuffed Chicken, we also added bacon bits on top of ours. Do we need to say more?!?
For our Cauli Mac and Cheese with Cordon Bleu Stuffed Chicken
Real Good Foods' Stuffed Chicken (we used our Cordon Bleu flavor), defrosted overnight in the fridge
- 1 16 ounce package of frozen cauliflower, defrosted
- 4 slices of cooked bacon, plus extra for topping
- Optional: Chives for garnish
For the Cheese Sauce
4 ounces of shredded cheese, plus extra for topping
4 ounces of cream cheese
1/4 cup of sour cream
2 tablespoons butter
3/4 cup heavy cream
1/4 teaspoon ground mustard
A pinch of ground cayenne pepper and ground nutmeg
Salt & pepper to taste
For Our Cali Mac and Cheese with Cordon Bleu Stuffed Chicken
First, heat your oven to 350° Fahrenheit. Then add butter, cream cheese, and sour cream to a saucepan. Heat ingredients over medium heat, stirring continuously until cream cheese is melted and the mixture is smooth. Now add the heavy cream stirring until thoroughly combined. Add the spices and stir.
Next, add the shredded cheese, and stir until completely melted and well combined. Taste, and adjust seasoning if necessary. Lastly, add your cauliflower, diced Cordon Bleu Stuffed Chicken, and crumbled bacon to the cheese sauce and stir to combine.
Pour mixture into a greased casserole dish. Bake for 35-40 minutes, until the mixture is heated through and the top is beginning to turn golden
