Creamy Stuffed Chicken, Feta and Tomato Bake

Our Spinach and Artichoke Stuffed Chicken combines with creamy feta, roasted tomatoes and low-carb pasta to create a cheesy casserole dinner that everybody in the fam will enjoy. Just don't be surprised if you end up without any leftovers!
For Our Creamy Stuffed Chicken, Feta and Tomato Bake
Real Good Foods' Bacon Wrapped Stuffed Chicken (we used our Spinach and Artichoke Stuffed Chicken), defrosted overnight in the fridge
Box of low-carb pasta (or pasta substitute like zoodles, heart of palm noodles, etc)
2 pints (20 ounces) cherry tomatoes
1 14 ounce can of Artichoke Hearts (drained and chopped)
1/2 cup extra virgin olive oil
Salt & pepper to taste
Optional: dried red pepper flakes
One 8-ounce block feta cheese, drained
1 garlic clove, finely grated
1/4 cup fresh basil leaves, thinly sliced
1/4-1/2 cup Grated Parmesan cheese
Our Creamy Stuffed Chicken, Feta and Tomato Bake
First, make sure your Stuffed Chicken has been defrosted in the fridge overnight. Then preheat the oven to 400 degrees F.
Add the cherry tomatoes, artichoke hearts, olive oil, salt, pepper, and optional red pepper flakes to a large bowl and toss together to evenly coat. Pour into a baking dish, place the feta in the center of the tomatoes and bake for 30-40 minutes. While it is baking, cook your pasta (if needed) and slice your defrosted Stuffed Chicken.
Once the tomatoes and feta come out of the oven, smash the tomatoes and feta into a smooth and creamy sauce using the back of a spoon. Grate the garlic into the dish, add the basil and stir to combine. Then add in your pasta or pasta replacement and parmesan cheese. Stir until combined and top with your sliced Stuffed Chicken.
Top with additional Parmesan cheese and place the dish back into the oven for an additional 10-15 minutes, until chicken is heated and cheese has melted.
