Low Carb Buffalo Chicken Salad

This low carb salad is easy to change up based on what ya have in your fridge. Plus, the oven does most of the work - especially if you already have some pico de gallo and hardboiled eggs on hand. Plus, this Buffalo Chicken Salad is also an easy gluten free, grain free meal that's just as tasty as leftovers for lunch as it is fresh for dinner!
Ingredients
For Our Low Carb Buffalo Chicken Salad
Real Good Foods Bacon Wrapped Chicken (we used our Three Cheese flavor)
Mixed greens
Pico de gallo, already prepared
Hardboiled eggs
Avocado
Crumbled Blue Cheese
Dressing of choice (we used Primal Kitchen's Ranch dressing mixed with extra blue cheese)
Instructions
For Our Low Carb Buffalo Chicken Salad
First, preheat your oven to 375 degrees. Place your frozen Bacon Wrapped Stuffed Chicken on a baking sheet in the oven, and bake for 36-38 minutes. Allow to cool 1-2 minutes.
While it cooks, prep the other components of your Buffalo Chicken Salad. Slice your Bacon Wrapped Stuffed Chicken and add on top, followed by dressing. Then dig in!
