Four Ingredient Low Carb Enchilada Soup
This easy, gluten-free enchilada soup is the perfect mix between Mexican style comfort food and low carb healthy living. This recipe is made with our Grande Enchiladas and is loaded with 20g protein and only 2g carbs. With just 4 ingredients and less than 30 minutes to cook, this gluten-free dinner is perfect for any day, no matter how busy.

For Our Four Ingredient Low Carb Enchilada Soup
Real Good Food's Grande Enchiladas
1 Can Green Chili Enchilada Sauce
1 Cup Chicken Broth
Shredded Cheese
Optional: Sour Cream
Instructions
For Our Four Ingredient Low Carb Enchilada Soup
Place Enchiladas on a baking sheet and cook at 400 degrees for 25-28 minutes. While that is cooking, heat up the green chili enchilada sauce and chicken broth. Simmer for 15 minutes.
Remove Enchiladas from the oven and cut into 1-inch slices. Place Enchilada slices into a bowl then ladle the green chili enchilada sauce and chicken broth mixture into the bowl. Add shredded cheese and sour cream.
