The only thing better than a keto-friendly pizza recipe?!? An epic pizza quesadilla recipe! And in honor of National Quesadilla Day, we're sharing two EASY ways you can turn Real Good Foods pizzas into a cheesy, dreamy quesadilla!

Ingredients For Cauliflower Crust Personal Pizza Quesadilla:
2 Real Good Foods Cauliflower Crust Personal Pizzas in your choice of flavor. We went with pepperoni, but you do you!
Handful of your favorite cheese - we went with mozzarella!
How to Make Our Pizza Quesadilla Recipe:
First, place your two frozen Cauliflower Crust Personal Pizzas on a perforated pan. This is the secret to making them SUPER crispy in the oven!
Then, add some extra cheese on top of both pizzas. After all, what quesadilla isn't stuffed with allll the cheese?
Once your pizzas have their extra cheesy toppings, cook them according to the instructions on the box. If desired, sprinkle on even more cheese in the last few minutes of cooking!
After your pizzas are golden and all the cheese is thoroughly melted, place one of your pizzas on a cutting board. Place the other one - toppings-side-down - right on top to create your pizza quesadilla!
Cut in half and devour!
What's So Super About our Superfood Pizza Crust?!?
Before we jump on into the recipe, let's break down why our Superfood Pizza Crust is so super!
Well, first of all, it's gluten free, has only 11g Net Carbs for HALF the Pizza and is packed with 8g protein!
As for its "super" ingredients, our crust is made from Avocado, which is packed with antioxidants and nutrients, as well as broccoli and almonds.
Compared to other keto-friendly pizza crusts, our Superfood Pizza Crust also holds up well under alll the toppings and is SUPER crispy. So if you want your quesadilla to be more thin and crispy, this is the keto-friendly pizza crust you'll wanna use!
Ingredients For Superfood Pizza Crust Pizza Quesadilla:
Liberal handful of your favorite blend of cheese (we chose mozzarella!)
Favorite dip or sauce, like guac or Sriracha (optional)
How To Make This Pizza Quesadilla Recipe:
First, take your Superfood Pizza Crust and cut it in half.
Then, sprinkle one of the halves with a liberal amount of cheese. (And if you add more than one handful of cheese...well, we don't judge!)
Place BOTH halves on a perforated baking tray, and cook according to the box instructions. Cook until the crust is golden and the cheese is melted.
Next, stack your two halves of the pizza crust on top of each other, with the cheese squished in the middle! Using a pizza cutter, slice the large quesadilla into four equal parts...and devour your pizza quesadilla on its own, or pair with guac or your fave dip! We also loved drizzling some Sriracha on ours!
