For Our Low Carb Huevos Rancheros Chicken Enchiladas

First, preheat your oven to 400 degrees. Place your frozen Grande Chicken Enchiladas on a baking sheet in the oven, and bake for 20-30 minutes, or until cooked through. While they cook, cut up your tomato, red onion and green bell pepper and combine in a bowl. Also slice your avocado.

When you have 1 to 2 minutes left on your enchiladas, heat up a pan with a little butter or oil. Crack the egg inside and cook on medium heat for around 3 minutes, or until the egg is set.

Once done, top your Grande Chicken Enchiladas with the fried egg and add the veggie salad, avocado, and fresh cilantro on top.
