Chicken Parmesan with Side Green Salad

Ingredients

  • 1 Cup of your favorite low-sugar Marinara Sauce
  • 4-6 slides of fresh mozzarella or provolone
  • 2 TBSP of grated parmesan cheese
  • Fresh Basil (chopped, for garnish)
  • 4 cups chopped romaine or green leaf lettuce
  • 1 cup thinly sliced cucumber
  • ½ cup shaved Parmesan Cheese
  • 1-2 TBSP olive oil
  • 1 TBSP white wine vinegar or lemon juice
  1. Preheat Oven to 400 degrees
  2. While oven is preheating, prepare the salad:
    1. Roughly chop romaine, wash, and set aside to dry
    2. Slide cucumbers
    3. Toss lettuce, cucumbers, and parmesan together in a large bowl
    4. Drizzle with olive oil and vinegar (or lemon juice)
    5. Season with salt and pepper
  3. Once oven is preheated, place 4-5 fillets in an oven-safe pan
  4. Bake until golden and heated through (about 15-20 minutes)
  5. Remove chicken from oven, top with marinara sauce and sliced cheese. Return to oven and bake until cheese is melted and bubbly (approx. 5 minutes)
  6. Sprinkle with grated parmesan cheese and fresh basil before serving
