Spinach Artichoke Dip

Ingredients

  • 1 ½ cups cottage cheese (blended smooth if you want classic dip texture)
  • 1 cup chopped artichoke hearts (canned/jarred, drained)
  • ½ cup grated Parmesan
  • 1 cup shredded mozzarella, plus extra for topping
  • ¼ cup mayonnaise OR Greek yogurt (adds creaminess—either works)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt, plus pepper to taste
  • Optional add-ins:
    1 cup chopped spinach
    ½ cup shredded chicken
    Pinch red pepper flakes
    Squeeze of lemon
    ¼ cup cream cheese for extra richness
  1. Preheat oven to 375°F
  2. In a mixing bowl, combine: cottage cheese, artichokes, Parmesan, mozzarella, mayo/yogurt, garlic powder, onion powder, salt, and pepper.
  3. If you want a smoother dip, blend the cottage cheese first (or blend ½ of the full mixture).
  4. Spread mixture into a lightly greased 8×8 baking dish.
  5. Top with a small handful of extra mozzarella.
  6. Bake 20–25 minutes, until bubbling and golden at the edges.
  7. Let cool 5 minutes before serving.
  8. Serve with chicken strips and veggies.
