Low Carb Enchiladas and Fajita Veggies

Ingredients

For Low Carb Creamy Poblano Enchiladas

1 box of Real Good Foods Low Carb Creamy Poblano Enchiladas

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

1 onion

Cooking oil

Seasonings of choice (we love pepper, garlic salt, chili powder and paprika)

Instructions

For Low Carb Creamy Poblano Enchiladas and Fajita Veggies

First, thinly slice the peppers and onion and heat 2 tbsp of cooking oil in a skillet. Once heated, add the peppers and onion, then season and stir. While the veggies are cooking, remove the film from the enchiladas and place them in the air fryer. Cook at 375 degrees for 10 to 12 minutes. As the enchiladas cook, stir the veggies occasionally. Remove the vegetables from heat once the peppers are tender and the onions are translucent. Plate the vegetables and enchiladas and serve.
