Chicken Skewers and High Protein Buffalo Cheese Dip

Ingredients

  • ¾ Cup Greek Yogurt
  • ½ Cup Cottage Cheese
  • 2/3 Cup Buffalo Sauce
  • ½ TSP Garlic Powder
  • ½ TSP Onion Powder
  • 2/3 Cup Cheddar Cheese, grated
  • 3 Green Onions, diced
  1. Preheat Oven to 400 degrees
  2. Place 10-12 frozen strips on an oven-safe baking sheet and cook for 16-19 minutes (or until internal temperature reaches 165 degrees)
  3. While the nuggets cook, prepare the buffalo cheese dip
  4. Place all remaining ingredients into a food processor or blender
  5. Blend until smooth and creamy
  6. Pour into a small bowl and warm in microwave (30-45 seconds), or gently heat on stovetop, until dip has warmed through and cheese is melted
  7. Once the strips are cooked, remove from oven and let cool completely.
  8. Slice the strips in to bite sized pieces
  9. Assemble the skewers: chicken, celery, cheese, carrots
  10. Enjoy!
