Kale Crunch Salad with Crispy Chicken Nuggets

Ingredients

  • Real Good Foods Lightly Breaded Chicken Nuggets
  • 1 bunch of kale, stems removed
  • 1 bag of sliced carrots
  • Celery, chopped
  • 1 green apple
  • Olive oil
  • Champagne vinegar

1. Preheat oven to 400 degrees.
2. Place 8-10 frozen nuggets on baking sheet and cook for 16-19 minutes (or until internal temperature reaches 165 degrees)
3. Roughly chop kale and place in large bowl. Drizzle with olive oil, sprinkle with salt, and massage until kale is soft but not wilted
4. Toss with chopped celery, chopped green onion, and sliced carrots
5. Mix salad dressing (3 parts olive oil, 1 part vinegar): shake
6. Top salad with chicken nuggets and drizzle generously with vinaigrette
7. Enjoy!
