Meal Prep Low Carb Chicken Enchiladas with Spanish Cauliflower Rice

Meal prep has never been easier thanks to our low carb Grande Chicken Enchiladas, which have low carb tortillas made from chicken and cheese. Pair them with some homemade Spanish cauliflower rice and roasted vegetables, and you can have a week's worth of low carb meals ready in less than an hour! Plus, this low carb dinner or lunch is also gluten free and grain free.

And if you're meal prepping on a budget, our low carb Grande Chicken Enchiladas are also sold in a 6-pack at Costco. Who says meals prepped ahead of time have to be expensive, time-consuming or high in carbs?!?

Ingredients

For Our Low Carb Chicken Enchiladas and Spanish Cauliflower Rice

Real Good Foods Grande Chicken Enchiladas (we cooked 8 enchiladas total)

1 pound bag cauliflower rice, defrosted if frozen

1/2 cup tomato sauce

Onion flakes, garlic powder to taste

Fresh cilantro

1 pound bag broccoli and cauliflower, raw

Instructions

For Our Low Carb Chicken Enchiladas and Spanish Cauliflower Rice

First, preheat your oven to 400 degrees. Place your frozen Grande Chicken Enchiladas on a baking sheet in the oven, and bake for 20-30 minutes, or until cooked through. Cook your raw broccoli and cauliflower florets at the same time on a separate baking tray.

While those cook, make your Spanish Cauliflower Rice. Pour your cauliflower rice in the pan on the stove at medium heat. Add the tomato sauce, spices and cook until tender.

Once done, add fresh cilantro to your Spanish Cauliflower Rice and place in your meal prep containers along with the Grande Chicken Enchiladas and roasted cauliflower and broccoli.
